Libby Swanepoel
Dr Libby Swanepoel is an Associate Professor in Nutrition and Dietetics, where she leads nutrition and dietetics education and advances curriculum innovation, employability, and professional identity development. She contributes to national and global workforce development through the World Public Health Nutrition Association and the ongoing revision of the Australian nutrition science competency standards. Libby is also co-founder of UniSC’s Seaweed Research Group, and Health and Communities Research Theme Leader for the Australian Centre for Pacific Islands Research, and a current Superstar of STEM. Her multidisciplinary research spans food systems, agriculture, public health nutrition, and global development, with projects across Australia and the Pacific exploring seaweed’s nutritional potential, climate benefits, and role in sustainable livelihoods. Through partnerships with community, industry and government, her work integrates nutrition, food technology and social science to build resilient, inclusive and sustainable food systems.
